Sweets for the Sweet: Valentine's Day Recipes 2021



It's the month of LOVE and what better a treat than to give or receive sweets for the sweet! And, sometimes the best sweet are those that are made at home. Here are a few tried and true Valentine's recipes that are sure to make your sweet's heart thump with love.


I. Peanut Butter Rice Krispie Treats



INGREDIENTS:


7 cups mini marshmallows

6 tablespoons butter

1/2 cup peanut butter

7 cups Rice Krispie cereal

15 seasonal (or 24 regular) peanut butter cups

2 cups milk chocolate chips

1 tablespoon shortening Sprinkles (optional)


INSTRUCTIONS:


Begin by greasing a 9x13-inch pan with butter or cooking spray. Set aside. In a large saucepan, slowly melt the butter over low heat. Once it's melted, add the marshmallows and stir until melted. Press half of the mixture into your prepared pan. Place a single layer of the peanut butter cups on top the Rice Krispie mixture. Then add the remaining mixture over top and press down. Let cool. Finally, melt the chocolate chips and shortening in a double boiler. Or in a microwave save bowl, microwave at 30-second intervals, stirring in between, until the chocolate is melted and smooth. Spread evenly over the top of the Rice Krispie treats. Garnish with sprinkles (optional). After the chocolate is completely set, cut and serve the treats.


II. Valentine's Day White Chocolate Chex Mix



INGREDIENTS

  • 3 cups Wheat Chex

  • 3 cups Rice Chex

  • 3 cups Cheerios

  • 3 cups M&Ms - divided

  • 1 1/2 cups pretzels

  • 1 cup honey roasted peanuts

  • 5 cups white chocolate chips

  • 1 tablespoon vegetable shorting - Crisco, optional

  • Sprinkles - optional


INSTRUCTIONS

  • In a large bowl, combine the Wheat and Rice Chex, Cheerios, pretzels, and 2 cups of the M&Ms. Mix evenly to distribute.

  • Over a double boiler, melt the white chocolate along with the vegetable shorting. Drizzle the melted chocolate over the cereal mixture and then stir with a wooden spoon. Mix gently until everything is evenly coated with the chocolate.

  • Place a length of parchment paper on your counter and spread the Chex mixture evenly on the paper. Sprinkle with the remaining cup of M&Ms. Add sprinkles, if desired. Let the Chex mix cool for about 1 hour. Break into pieces and store in an airtight container.
